Butterscotch Oatmeal


We eat quite a bit of oatmeal at our house.  It's a cheap nutritious breakfast food, and there's not many other foods can you call cheap and nutritious.  I usually serve it at least once a week  My children LOVE it. 

Whisk together in a medium saucepan.

2 eggs

3 1/2 cups milk

2/3 cup brown sugar ( You can use more or less depending on how sweet you like it.)

1/2 teaspoon salt

Cook over medium heat until boiling.

Add 2 cups Quick Oats, stir, bring back to a boil, and turn off heat immediately.




Let sit for 5 minutes and stir in 4 Tablespoons of Butter or Margarine.  Serve with a little cold milk.  This recipe serves 4-6 people depending on how much you eat for breakfast.

  1. We call it porridge here in Australia and I can remember eating it in winter as a child but as I was a slow eater by the time I got to the end it was cold and thick and not very nice!!

    I make a very simple porridge using the microwave - oats and milk until cooked and thickened then add extra milk once in the bowl and some brown sugar sprinkled over top.

    Yes, it is very cheap here to. Oats makes a great cheap biscuits as well. We call them ANZAC biscuits and they are a huge favourite in Australia.

    I too remember letting oatmeal get cold in my bowl and then struggling to choke it down. :)

  4. I forgot about butterscotch oatmeal! Have to make it again. We've been eating more oatmeal lately, as we're low on milk and eggs. I invented one of my own--chocolate oatmeal. I use carob rather than cocoa, because chocolate is a migraine trigger, but my crew likes carob. I just add carob powder and coconut to the oatmeal, and we top it with butter and honey in our bowls. Delicious!
